Overview
The oyster mushroom (Pleurotus ostreatus), alongside the button mushroom, is one of the most widely cultivated and purchased edible mushrooms in Poland — available year-round, at a price comparable to vegetables. For decades it has been used in the kitchen as a low-calorie, meaty ingredient in vegan dishes.
The oyster mushroom is one of the best-studied functional mushrooms in terms of its effect on lipid metabolism. Its fruiting bodies contain a compound structurally related to lovastatin, as well as beta-glucans and ergothioneine.
The oyster mushroom can genuinely help people with mildly elevated triglycerides or oxidized LDL who want to support their lipid profile through diet — this is the only area confirmed by independent intervention studies in humans. It won't help people with significantly elevated cholesterol who need a substantial LDL reduction — the mevinolin content in fruiting bodies is too low and unstable to work like a statin drug. For people already taking statins, the oyster mushroom can be a safe dietary addition, but given the theoretical additive effect, it's worth discussing with a doctor.
Where it's found
It grows naturally on dying and dead hardwood trees (including beech, oak, poplar) in the temperate climates of Europe, Asia, and North America. It's easy to cultivate on straw and sawdust, making it one of the cheapest cultivated mushrooms — including in Poland.
History of use
Cultivated for food for more than a hundred years — first on a commercial scale in Germany during World War I, as a food substitute during shortages.
Mechanism of action
The fruiting bodies contain mevinolin (lovastatin) — a competitive inhibitor of HMG-CoA reductase, at a much lower concentration than in pharmaceutical preparations. At the same time, the mushroom supplies beta-1,3/1,6-D-glucans that modulate immune system activity, plus fiber and plant sterols that limit cholesterol absorption.
HMG-CoA reductase, blocked by mevinolin, is the rate-limiting enzyme of the mevalonate pathway — the main route of cholesterol synthesis in the liver. Beta-1,3/1,6-D-glucans bind to receptors on immune cells, such as dectin-1, modulating their activity. Ergothioneine is actively transported into tissues via the OCTN1 transporter and accumulates especially in sites exposed to oxidative stress, acting as an intracellular antioxidant with a relatively long half-life.
Inhibition of HMG-CoA reductase
Mevinolin competitively inhibits the key enzyme of the mevalonate pathway, slowing cholesterol synthesis in the liver.
Binding of sterols and fiber
Plant sterols and fiber limit cholesterol absorption from the digestive tract.
Activation of beta-glucan receptors
Beta-1,3/1,6-D-glucans bind to receptors on immune cells (e.g., dectin-1), modulating their activity.
Antioxidant action of ergothioneine
Ergothioneine accumulates in tissues exposed to oxidative stress via the OCTN1 transporter.
Clinical effect
The combined action of these mechanisms translates, in intervention studies, into lower triglycerides and oxidized LDL.
